Georgia, You Just Turned Four Years Old, What are You Going to Do Next? "I'm Going to Disney World!"

... but Georgia didn't know that until the day before her birthday. On October 12th, we hopped into the car, I had packed it the night before while she was sleeping, and we started driving. Every time she asked where we were going, I told her we were looking for something fun to do for her birthday. Twelve hours later, we drove through the gates of Disney World, and it started to sink in for her. :)

We spent the week of Georgia's 4th birthday at the most magical place on earth!!! (and after viewing the week through my daughter's eyes, I do believe it IS the most magical place) Now, the fact that I have a four-year-old daughter could be a blog post all to itself - holy crap, where did those four years go? - but I'll stick to the highlights of our trip and some of the observations of a person who has not been to Disney World in more than 15 years. We did four parks in five days, one day at each and two days at the Magical Kingdom, which (no surprise) was my daughter's favorite. We also were in on the test phase of the magic bands. Don't know what those are? I'll get to that in a bit.

First day, the Magical Kingdom for my daughter's 4th birthday. We got there before the park opened because we had 8:15 a.m. reservations at Cinderella's Royal Table inside the castle. It was very expensive for a breakfast but worth every penny because my daughter dressed up like a princess (Cinderella somehow knew what hotel room we were staying in and left a dress, tiara and wand - hee, hee, hee) and loved going into Cinderella's castle! If you ever do it, I HIGHLY recommend the reservations before the park's 9 a.m. opening (as long as there are no early magic hours). You'll have to reserve it about 180 days out during busy times, and you'll have to set your alarm for about 6 a.m., but it was amazing to walk through the park with no one there! Perfect way to start our trip and my daughter's birthday. She met Cinderella, Ariel, Jasmine, Snow White and Sleeping Beauty and had a special chocolate slipper dessert. So what if it was 9-something in the morning -- it was her birthday so chocolate was in order!!

Her first ride ever at Walt Disney World - the carousel.
My daughter's favorite ride at the Magical Kingdom - Big Thunder Mountain. I have a speed demon on my hands, folks. Watch out when she turns 16!
We ended our first magical day with a birthday dinner at the Liberty Tree Tavern and a Minnie Mouse birthday cake. Yes, you can order a special cake through Walt Disney World and have it delivered to your table. And no, it's not cheap, but it was tasty!
Some of our favorites at the Magic Kingdom: It's a Small World, Big Thunder Mountain, Ariel's Grotto (where you meet her), The Barnstormer, Dumbo the Flying Elephant, Mad Tea Party and Enchanted Tales with Belle (she tells a story). I also love the Main Street Electrical Parade and the Wishes Fireworks Show.
Before we get to day two, if you're planning a trip to Disney World, get the Magic Bands if they're offered to you. I loved them! Right now, you can only get them if you're staying at certain Disney resorts as they're still being tested. It basically puts your park tickets, your room key, your fastpasses and your credit card on this waterproof band around your wrist. You don't have to carry it all - it's so conveinent. You select a private pin, so if you lose it, someone can't just pick it up and start using your credit card. And it gives you three Fastpasses at one time, which you can choose in advance. If you're familiar with Fastpasses, you know how awesome that is. Just a note from me though, I found most Fastpasses I had for the morning (11 a.m. and earlier) were wasted because the waits were not long yet and you could just do standby.

OK, so sidebar done - day two was at the Hollywood Studios. It's not my favorite park, but this was my daughter's and my husband's first trips - so I wanted them to see it all. We had lunch at the Hollywood and Vine because it's a character lunch with Jake from the Neverland Pirates, Handy Manny, Secret Agent Oso and June from the Little Einsteins. My husband fell in love with the lobster mac-n-cheese there, and my daughter likes watching the Disney Junior shows, so it ended up being a good pick. It was fun.

Some of our favorite rides/shows here: the Beauty and the Beast show, Star Tours, Toy Story Midway Mania, Fantasmic (very good, but didn't live up to the hype for me) and Disney Junior Live on Stage.
Day three - Animal Kingdom. Having been to Disney World a dozen-plus times in my lifetime (I was born in Florida), the Animal Kingdom is the one park I had not been to as it was still under construction the last time I visited WDW. So this one was a first for all three of us, and I really liked it. Do the safari ride first and early! When we got there at 10 a.m., there was already a 65 minute wait. Thank goodness we had a Fastpass+ for it. (It is one of the few rides I found was good to have a Fastpass for in the morning) It was a nice (but bumpy) ride, but my husband's and my favorite thing at Animal Kingdom was Finding Nemo - The Musical! It was fabulous!
Some of our favorites here other than Nemo: Festival of the Lion King and Kilimanjaro Safaris. Our daughter also got to meet several character here - fun!
Day four was Epcot - a place where you can travel around the world as you meander around a small lake. I remember not being so fond of this park as a kid, but there are some new rides here to make it more entertaining for the younger set and the International Food Festival just happened to be going on, so there was a lot of great food to try out. My daughter's second favorite ride out of all the parks is - surprisingly - at Epcot. It's new since the last time I was here, so it was also a first for me. It's called Test Track. You "design" you own car and then "test drive" it. The ride goes through stops and starts and turns inside, and then goes outside where you take a turn at 60 mph! I thought my daughter would start crying, but instead, she let out the happiest laugh ever! So cute. I would also recommend a Fastpass - it had a long wait early. As did Soarin', another newer ride. It was awesome! It had a 60+ minute wait by 9:45 a.m. Can we say Fastpass? I had also read somewhere that Epcot has the shortest lines of all the parks to meet the characters - ummm... no. Only Sleeping Beauty had a short line, so we met her... again. We met her three times on this trip, and funny, she looked a little different every time! :)

Some of our favorites at Epcot are definitely Soarin' and Test Track, and I personally like Journey into Imagination with Figment, but I think that's because I loved it as a kid.
Day five, our last at WDW - sniff, sniff - took us back to the Magic Kingdom. We caught some of the things we missed on day one there, and we still didn't get to do all the rides/shows I had wanted to catch. Oh well, that means we have to go back again, right? We did leave the park by 5:45 p.m. to catch our last dinner reservations of the trip - Chef Mickey's - where my daughter finally got to meet Mickey and Minnie! And mommy got to meet the dessert buffet...
Having gone to Disney so many times as a child and young adult, returning to Disney with my own daughter certainly held its fair share of magic. That this trip was for my daughter's fourth birthday made it all the more special. I don't know if it does the same for everyone, but WDW certainly brought out a little bit of the kid in me. I was anxious to get to all the rides, find the Disney characters and search out the special sweets and treats that are scattered around the parks. Is it the most magical place on earth? Well, I guess that depends on you - but in my daughter's eyes it was ALL magical (she even thought fairies came to our room every day to straighten it and arrange her stuffed animals) and that made the entire trip just perfect.

Happy Birthday, My Love!

OK, I'll admit, I missed writing a birthday post for my daughter and the namesake of this blog on October 13th. So I am making sure I don't miss the other big birthday of the year - my hubby. Happy Birthday, sweetheart!!!

Since it has only been his birthday officially now for a little more than an hour and he is fast asleep, I don't have any pictures yet to go along with his birthday celebration. But I never shared Georgia's fun party - and first "real" kids' party - so you're about to get bombarded now!

We actually started her celebrations on Friday, the day before her birthday, with a little party at school - her first!

Then on Saturday, the 13th, came the BIG DAY! From the start, Georgia wanted a Spiderman birthday cake - so I built the party around that. We did more superheroes, since finding everything Spiderman left me a little more limited. And did we ever have fun. Six little girls came over - add Georgia to make seven - and by the time the party was over, I would have sworn we had 30 kids in our home. But they had so much fun, and so did we.

But once the party was over, we still had lots of birthday left - so thank goodness the county fair was going on! Georgia's first Ferris Wheel ride to start things off, then it was a train, the tea cups, the pony ride and some fair food...

And how do you top all that? Well, I don't know if you do with two exhausted parents at this point, but Georgia did get to pick where we had her birthday dinner - Chick-fil-a.

All in all - a fabulous day. Now let's hope my hubby has just as great a birthday - although I can't promise any superhero-themed party. That one did me in for a year.

March 25, 2012 - First Pigtails and Party!

I have tried for months now to put ponytails in Georgia's hair. They have become as elusive to me as a unicorn. She would always say "no, mommy, no - hurt." Why she thought they would hurt, I have no idea other than she is very sensitive about her hair being brushed and, of course, pony tails require some brushing. It's been so frustrating. Oh, how I have yearned to see cute little ponytails sprouting from my little's head.

But today, my unicorn stepped right in front of me. Georgia - out of the blue - asked me to put her hair in a ponytail. What?!?!? I thought she would quickly change her mind when I grabbed the brush and made a move to her hair, but no, she was all for it.

And you want to talk about cute. The little one just blew cute right out of here!

And did you notice the cupcake? Georgia was invited to her first birthday party today.

It was themed around the local summer collegiate baseball team, the Morehead City Marlins. Georgia wasn't so sure about the mascot though.

She warmed up to him though and had a blast playing with the other kids at the party. My, my - my little one is growing up so fast!

My Mom's Boston Cream Pie

My birthday post led to a request for my mom's super awesome Boston Cream Pie recipe. It's my favorite, and I'm telling you, it's the icing that makes this cake... or pie... or cake... It's a dual-personality dessert.

Anyway, here's the recipe - ENJOY!

Kathi's Boston Cream Pie

1 box of yellow cake mix
1 large box of instant vanilla pudding
2 3/4 cup milk
4 ounces unsweetened chocolate
6 Tbsp. butter or margarine
2 cup confectioner's sugar
1 1/2 tsp. vanilla
hot water

Mix and bake cake according to directions using 8" pans. Cool cake.

Mix pudding according to directions, except use 2 3/4 cups of milk. Refrigerate pudding until cake is cool.

When cake is COMPLETELY cool and pudding is set, slice each cake in half. Divide pudding between both cakes and fill cakes with pudding.

Melt chocolate and butter over LOW heat. When melted, remove from heat and stir in confectioner's sugar and vanilla. Add 1 tsp. of hot water until proper consistency is reached. You want it thin enough to pour/spread over cake, but not too thin that it runs off the top of the cake or soaks into the cake. Divide icing between two cakes and spread on top of each.

***Here's a few of my notes***

- obviously, this makes two cakes. Unless you have a big family, you might not want both at the same time. I usually cut one cake and wrap the other in saran wrap and stick it in the fridge. I put half of the pudding in a container in the fridge as well. And I half the icing recipe. Then we eat one cake over a few days and when it's done, I finish making the other. It equals a week of Boston Cream Pie in my house - heaven!

- I used 9" pans because I don't have 8". It works fine, your layers will just be a little thinner and harder to handle after you cut them in half. At least one of mine normally breaks a little, but I also remember this happening to my mom when she used 8" pans.

- if I'm in a hurry and don't have time for the cake to cool on the rack, I cut it in half and stick it in the freezer for about 5 minutes. You do want the cake completely cool, otherwise the pudding will get runny and the icing will not set.

I hope you enjoy the cake as much as I do. I actually like it better the next day after the icing has hardened a little in the fridge. Now I want to go make another one!

I'm 29... Again.

Wasn't 29 a good year? Why can't I just stay that age (and weight and lack of wrinkles and amount of energy) forever? What's wrong with that?

I had a birthday (again) this weekend.

Wow, to think back to 29 and remember how different my life was. There was no Georgia. My mom was still alive and healthy. My parents' house was still standing with all my childhood memories safely tucked inside - no sign of fire. I wasn't married. I was working a not-so-great job and had not yet moved to Omaha for the job that I would eventually get laid off from. My two dogs were still youthful. I did not have baby fat I fear I'll never lose. I was living on a lake in Georgia.

Life was VERY different.

Not that life at 29 was any better or worse than life is now. It was a year in my life that added to the person I am today at 30... something. It was a year like all the others in that regard - snippets stolen from that year that I still hold onto and live in my present everyday and snippets that I would rather do without and have pushed way back into who I am -- but a bunch of snippets that no matter what esteem I hold them in, all have some impact on the me of today... and tomorrow.

Would I go back in time to 29 if I could? I don't think so... I'm pretty good where I am right now. Although maybe I'd go back for a minute if I could and give my mom the biggest, strongest, longest hug she'd ever had. Yeah, I'd like to do that.

My mom made the BEST Boston Creme Pie - it's my favorite. Moist yellow cake, creamy pudding in the middle and the best darn chocolate icing you've ever had. None of that wussy milk chocolate icing. This stuff has bite and it makes sure you know it's there. She made me that cake for almost every birthday of my adult life.

I pulled out that recipe on my birthday this year, and Georgia, my hubby and I made that cake together.
(excuse the cell phone pic)

Mom, it was really good.

And before the cake, we dined on NY Strips and garlic asparagus. Yum!

Oh, and this will come as a big surprise, we spent the day at the beach. No pictures of me though, just Georgia. Come on, my birthday's not that different! :)

I think she enjoyed my birthday as much as I did. She was so proud when she and her daddy brought me breakfast in bed and she got to hand me her card. The cutest darn little girl EVER! And she kept telling me "happy berd-day" all day long.

How could I ever want to go back to another age after that?

No thank you... 30ish is just fine.

She's 2, She's 2... I Can't Believe She's 2!!!

How can I put into words the last two years? For a woman who makes a living talking and writing, right now I'm coming up a little dry.

My baby turned two yesterday!

Let's see... who is this little brown eyed girl today?

10.13.11 089

She loves Elmo, he lights up her face every, single time. She sings "La, la, la, la, Elmo's world" often. She asks to watch "Elmo's World" most every morning... and afternoon... and evening. She loves her Elmo T-shirt her daddy bought her at Target. But it's not all Elmo. Cookie Monster, whom she just calls monster, and Super Grover get honorable mentions in the obsessed department. Sesame Street is a pretty big hit in our home.

But there is something else Georgia loves even more than Elmo, and it's something that makes me very happy. The girl loves books. Her favorite right now is "Wacky Wednesday" and "The Cat in the Hat" and "There's a Wocket in My Pocket." She sometimes will disappear into a corner and just read and read aloud to herself. It is honestly one of the most precious things I've ever seen. And she's really good at making up a story to go with the pictures. She also is very insistent that mama and dada read to her regularly... and don't dare try to tell her your busy.

Georgia sings her A,B,C's, and she can get through the entire alphabet. She counts to at least 15 and is getting better and better at actually counting objects correctly. She knows her days of the week, sung to the tune of Beethoven's 9th Symphony. Georgia identifies the colors red, pink, yellow, black, white, blue, green, brown and orange. She is always very proud when she gets a new pair of shoes and delights in taking them off herself. (Do we have a shoe-hound on our hands?) My little lovely loves to dance and loves to sing and loves to smile. She has just started smiling for pictures when I ask her to, and it's adorable! She loves to go for walks and Dandelions, watch out! She picks every one she can find.

Georgia is also a daddy's girl and sometimes fights for his attention with me. We have our squabbles and stare offs from time to time, but can I blame her? Georgia's daddy is the best. I'm glad she adores him so much.

On that note, Georgia's independent streak can be as wide as a canyon sometimes, but then like any child, it becomes as narrow as a needle. But when the canyon appears, temper-tantrums and a battle of wills become common. My daughter is not one to step down easily. I hope she keeps that with her always, to a degree. It will serve her well in life.

This year's birthday celebration was a little changed from last year. For birthday #1, we headed back to Georgia where 20 or so family members and friends gathered to celebrate the day Georgia came into our lives. Today, it was just the three of us - Georgia, mama and dada. It was perfect. A day of smiles and love and celebration.

We headed to Georgia's two favorite places. First, the aquarium...

We ended the day with cake and presents and the singing of "Happy Birthday." This year, Georgia didn't cry when we sang. I guess mama and dada's singing is just better. :) And the party was full of red, lots of red, and you can probably guess why... ELMO!

My little girl. How I hope and dream for you every day, and I know as the birthdays continue to come, one day you'll have your own hopes and dreams. I can't wait to see what they are, but my hope is that my dreams carry you a little longer so you'll stay my little girl for a time. Watching you grow up is beautiful but at times, bittersweet.

Happy Birthday sweetheart... the girl who will always have my heart.
